      Mediterranean Lentil Soup

      Benefits: A powerhouse of protein, fiber, and healthy fats for gut health.

      Ingredients:

      1 cup green lentils

      1 onion, chopped

      2 carrots, diced

      3 tbsp extra virgin olive oil

      1 tsp cumin

      4 cups vegetable broth

      Salt & pepper to taste

      How to Make It:

      Sauté onion and carrots in EVOO for 5 minutes.

      Add lentils, broth, and seasonings.

      Simmer for 30 minutes until lentils are tender.
