      EVOO & Lemon Roasted Potatoes

      Benefits: Healthy carbs + good fats for balanced energy and anti-inflammatory benefits.

      Ingredients:

      • 4 potatoes, cut into wedges
      • 3 tbsp extra virgin olive oil
      • 1 tbsp lemon juice
      • 1 tsp dried oregano
      • Salt & pepper to taste

      How to Make It:

      1. Preheat oven to 400°F (200°C).
      2. Toss potatoes with EVOO, lemon, and seasonings.
      3. Roast for 35–40 minutes until crispy.
